Chicken or Turkey Fajitas

A meal in itself or serve with spicy black bean salad.

Chicken or Turkey Fajitas

  • 1¼ pounds chicken or turkey breast, boneless and skinless, trimmed of fat and membrane and cut into thin strips
  • ¼ large red onion, coarsely chopped
  • ½ cup salsa, store bought or homemade
  • ¼ cup chopped fresh cilantro
  • ⅓ cup fresh lime juice
  • ¼- 1/2 teaspoon crushed red pepper flakes
  • 1 teaspoon vegetable oil
  • 1 - 2 red onions, thinly sliced
  • 1 - 2 red or yellow bell peppers, thinly sliced
  • 8 - 12 flour tortillas
  • Freshly chopped cilantro
  • Sour Cream or Yogurt
  • Avocado or Guacamole
  • Salsa, store bought or homemade
  1. Place the chicken strips in a medium size shallow glass or ceramic bowl and add onion, salsa, cilantro, lime juice and red pepper flakes. Cover and let stand at room temperature for no more than one hour or refrigerated for 4 hours.
  2. Preheat oven to 250 degrees.
  3. Heat a large nonstick or cast iron skillet over a medium flame and add oil. When the oil is hot, add onions and peppers. Cook for 10 - 15 minutes or until the vegetables begin to soften and brown. Place pan in oven to keep warm.
  4. Wrap the tortillas in aluminum foil and place in the oven to warm.
  5. Heat a skillet over a high flame and add chicken strips. Cook about 2 - 3 minutes or until chicken has browned, turning once.
  6. Serve, buffet style, with the peppers and chicken in the skillets and the sour cream, guacamole and salsa on separate plates or bowls, allowing each person to assemble their own fajita.
