Chocolate Bread Pudding

Chocolate Bread Pudding

  • 6 cups bread cubes (standard crouton size) from fresh anadama, oatmeal, challah, cinnamon or white bread
  • 1 cup heavy cream
  • 6 ounces semi sweet chocolate, grated
  • 2 ounces unsweetened chocolate, grated
  • ½ cup white sugar
  • 5 large eggs, separated
  • pinch salt
  • ⅓ cup unsalted butter, room temperature
  • 1 tablespoon vanilla extract
  • ½ teaspoon ground cinnamon
  1. Preheat oven to 350 degrees. Lightly butter an 8 x 8 inch baking dish.
  2. Place bread cubes in a large mixing bowl.
  3. Heat cream over low heat in a small saucepan.
  4. Add chocolates and cook until the chocolates are completely dissolved.
  5. Place in a food processor fitted with a steel blade.
  6. Add sugar, egg yolks, butter, vanilla and cinnamon and process until smooth.
  7. Pour mixture over bread cubes.
  8. Place egg whites and a pinch of salt in an electric mixer and beat until they form stiff peaks. Gradually add whites, by hand, a little at a time, to chocolate mixture and gently combine until incorporated.
  9. Place in baking dish.
  10. Place the baking dish in a roasting pan filled with 2 inches of water. The pudding should be surrounded by a bath of hot water.
  11. Bake for 35 minutes or until pudding just begins to set.
  12. Serve warm with whipped cream.
