Green Salad with Creamy Orange Dressing

Serves 6.

FOR THE DRESSING
2 tablespoons olive oil
1 tablespoon sherry vinegar
2 tablespoons frozen orange juice concentrate
2 tablespoons goat cheese

1 bunch romaine lettuce, outer leaves discarded, inner leaves torn
1 bunch watercress, well washed and torn
1 head radicchio, torn
1 fennel bulb, cut into large julienne
1 orange, cut into thin slices

1 teaspoon kosher salt
½ teaspoon black pepper

1. To make the dressing: Place the oil, vinegar, orange juice concentrate, and goat cheese in a blender and blend until creamy.

2. Place the romaine, watercress, radicchio, fennel, and orange in a large salad bowl and drizzle with the dressing. Sprinkle with salt and pepper and serve immediately.
