  • **Crust**
  • ¾ cup all purpose white flour
  • 1½ tablespoons confectioners sugar
  • ¼ teaspoon salt
  • 6 tablespoons unsalted butter
  • **Filling**
  • 2 eggs
  • 1 egg yolk
  • zest of one lemon
  • ⅔ cup fresh lemon juice (about 3 - 4 lemons)
  • ½ cup white sugar
  • **Topping**
  • Confectioners sugar, for sprinkling
  • Raspberries or strawberries, for garnish (optional)
  1. Preheat oven to 350 degrees. Lightly butter an 8 x 8 inch baking pan.
  2. Combine flour, confectioners sugar and salt in a large bowl or food processor fitted with a steel blade.
  3. Add butter, one tablespoon at a time, and mix until the butter is completely incorporated.
  4. Pack well into the prepared baking pan and bake for about 20 - 25 minutes or until slightly golden. Set aside to cool completely.
  5. Place the eggs, egg yolk, zest, lemon juice and sugar in a large bowl or food processor fitted with a steel blade.
  6. Mix until the ingredients are completely incorporated.
  7. Pour over cooled crust and bake for about 15 - 18 minutes or until the custard is just set. Do not overbake.
  8. Cool to room temperature and then refrigerate for at least one hour.
  9. Sprinkle with confectioners sugar and if desired, garnish with fresh raspberries or strawberries.
