Although this dressing is perfectly suited to this meal, it can be used on any green salad.
6 tablespoons coarsely chopped pistachio nuts
1 tablespoon walnut oil
3 tablespoons olive or canola oil
¼ cup fresh lemon juice
1 large head Bibb lettuce, outer leaves discarded, inner leaves washed and torn
1 large radicchio, torn apart
1 teaspoon kosher salt
½ teaspoon black pepper
1. To make the Pistachio-Lemon Dressing: Place 3 tablespoons of the pistachio nuts, the oils, and lemon juice in a blender and blend until creamy.
2. Place the Bibb lettuce and radicchio in a salad bowl and toss with the dressing. Sprinkle with the salt and pepper and remaining 3 tablespoons of pistachio nuts. Serve immediately.
