Ingredients
  • ½ pound unsalted butter, room temperature
  • 1 cup white sugar
  • 1 cup light brown sugar, packed
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1½ cups smooth peanut butter
  • 3⅓ cups all purpose white flour
  • 1½ teaspoons baking soda
  • ½ teaspoon salt
  • ¾ cup coarsely chopped peanuts
Instructions
  1. Preheat oven to 300 degrees. Grease cookie sheets lightly.
  2. Cream butter and sugars until light.
  3. Add eggs, vanilla and peanut butter, being careful not to over beat.
  4. Sift in dry ingredients and mix well. Stir in peanuts.
  5. Drop heaping teaspoonsful of dough onto cookie sheet and flatten with fork tines.
  6. Bake 15 - 18 minutes or until brown on edge but soft in middle.
  7. Cool sheet between batches.
