Makes about 5 dozen.
1 cup toasted pecans, finely ground (about ¾ cup ground)
1 cup unsalted butter, at room temperature
6 tablespoons sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
½ teaspoon kosher salt
½ cup confectioners’ sugar
1. Preheat the oven to 350 degrees. Lightly butter a baking sheet.
2. Place the pecans, butter, sugar, vanilla, flour, and salt in a mixer and mix well until combined. Roll into a ball, cover with plastic wrap, and refrigerate until firm.
3. Pull off small, walnut-sized pieces and form into balls, flatten the balls, and place on the prepared baking sheet. Transfer to the oven and bake until golden brown, about 14 to 16 minutes. Cool baking sheets between batches. Sprinkle with confectioners’ sugar.
4. Cool cookies before storing in an airtight container.
