This classic steakhouse side is a healthy alternative to French fries and a great breakfast accompaniment (without the garlic if you choose). You can substitute 1½ to 2 pounds sweet potatoes or yams for the new potatoes, or better yet, cook half each.
Serves 6 to 8.
3 pounds new potatoes, halved or quartered
2 tablespoons olive oil
4 to 6 garlic cloves, finely chopped
1½ teaspoons kosher salt
2 teaspoons finely chopped fresh rosemary leaves
1. Preheat the oven to 450 degrees.
2. Place the potatoes in a large bowl. Add the olive oil, garlic, and salt and mix until combined.
3. Place the mixture on a baking sheet or in large baking dish and cook, stirring after 15 minutes, until browned, about 35 to 45 minutes. Serve immediately, sprinkled with the rosemary.
