Roasted Walnut and Gorgonzola Dip

Roasted Walnut and Gorgonzola Dip

Serves: 1 - 1¼ cups
  • ¼ cup walnuts
  • ¼ pound gorgonzola cheese, at room temperature
  • ¼ pound cream cheese, at room temperature or Yogurt Cheese
  • ¼ cup cream (light or heavy is fine)
  • 1 teaspoon Cognac
  1. Preheat the oven to 350 degrees.
  2. Place the walnuts on a baking sheet, place in the oven and bake until lightly toasted, about 10- 12 minutes. Set aside to cool.
  3. Place the cheeses in a small mixing bowl and mash with a fork. Gradually add the cream, 1 tablespoon at a time, and the Cognac and mash until well incorporated. Mix in 3 tablespoons walnuts. Add
  4. Transfer to a small mixing bowl and cover and refrigerate for up to 3 days or serve immediately, garnished with the remaining 1 tablespoon walnuts.

Variation: Substitute goat cheese for the cream cheese
