Shrimp with Lime and Basil

Simple and flavorful. You an certainly use fewer shrimp per person, but I wouldn’t.

Serves 4 to 6.

1 tablespoon olive oil
2 pounds large shrimp, peeled and deveined, well dried
1¼ teaspoons salt
½ teaspoon black pepper
Juice and grated zest of 1 lime
¼ cup finely chopped fresh basil leaves
¼ teaspoon Vietnamese chili garlic sauce (optional)

1. Place a large skillet over medium-high heat and when it is hot, add the oil. Sprinkle the shrimp with the salt and pepper, place them in the skillet, and cook until lightly browned, about 2 to 3 minutes per side. Add the remaining ingredients, toss to combine, and serve immediately.
