Rich, creamy, crunchy, and spicy, this rendition made a convert out of me. I can’t say I ever cared for macadamia nuts until I tried these.
Makes 2 cups.
1 tablespoon vegetable oil
2 cups raw macadamia nuts
1 heaping tablespoon sugar
1 teaspoon curry powder
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon chili powder
1 teaspoon kosher salt
½ teaspoon cayenne pepper, or more to taste
1. Preheat the oven to 250 degrees. Line a baking sheet with parchment paper.
2. Place the oil and nuts in a medium-size bowl and toss until well coated. Add the remaining ingredients and mix well to coat evenly.
3. Transfer the nuts to the prepared sheet and arrange in single layer. Place in the oven and bake until lightly browned stirring occasionally, 25 to 30 minutes.
4. Remove from the oven, immediately loosen the nuts with a metal spatula, and set aside to cool before serving.
Not just for snacking: Sprinkle some on the classic steakhouse salad of iceberg lettuce and blue cheese.
