Serves: 10-12 cups
  • 2 teaspoons olive oil
  • 1 Spanish onion, chopped
  • 4 garlic cloves, chopped
  • 1 tablespoon dried marjoram
  • 2 teaspoons dried basil
  • 2 teaspoons fennel seed
  • ¼ - ½ teaspoon crushed red pepper
  • 1 - 1¼ pounds lean ground beef
  • 2 28 ounce cans crushed tomatoes
  • ½ cup white wine
  1. Heat a large skillet over a low flame and add oil. When the oil is hot, add onion, garlic, herbs and pepper and cook for about 5 minutes or until the onion is golden.
  2. Add beef, break up with a spoon and cook just until it loses its rawness.
  3. Add tomatoes and white wine and cook, uncovered, over lowest heat for about 3 hours. If you find it gets too thick, add small amounts of water.
