Tropical Fruit Salsa

The truth is that there are enough salsa recipes for an entire other book but I couldn’t resist including just this one, which is more unusual than most.

Tropical Fruit Salsa

Serves: 3 cups
  • ½ pineapple, finely chopped
  • 1 mango, pitted and finely chopped
  • 1 papaya, seeded and finely chopped
  • 1 medium red onion, finely chopped
  • 1 jalapeno pepper, seeded and finely minced
  • Juice and zest of 1 lime
  • Kosher salt
  1. Place everything in a bowl, and mix well. Serve immediately or cover and refrigerate up to 2 hours.

Serve with chips or with grilled fish.
