Apricot Soy-Glazed Sirloin Steak Tips

A perfect combination of sweet, tart, spicy, and rich. Serve this with sweet potatoes.

Serves 8.

FOR THE MARINADE
½ cup soy sauce
½ cup apricot jam or orange marmalade
¼ to ½ cup light brown sugar or honey
2 tablespoons rice vinegar
1 teaspoon crushed red pepper flakes

4½ to 5 pounds sirloin steak tips
1½ teaspoons kosher salt
½ teaspoon black pepper
2 scallions, chopped, for garnish

1. Place all the marinade ingredients in a small bowl and mix well. Place the steak tips in a glass or ceramic bowl, or in a resealable plastic bag, and add the marinade. Cover or seal, and refrigerate at least 3 hours and up to overnight. Turn occasionally. (The steak can be frozen up to 3 months.)

2. Preheat a grill or broiler.

3. Remove the steak and discard the marinade. Sprinkle the steak with the salt. Place the steak on a roasting pan or on a hot grill rack, and cook about 4 to 5 minutes per side for medium-rare. Garnish with the scallions and serve immediately.
