Serve with chips or on burgers and omelettes.
Makes about 2 cups.
1 to 1½ pounds beefsteak tomatoes, seeded, if desired, and diced
½ red onion, coarsely chopped
1 to 2 garlic cloves, chopped
1 yellow bell pepper, coarsely chopped
½ jalapeno pepper or chipotle chile, seeded, if desired, and finely chopped
½ cup finely chopped cilantro
½ teaspoon cayenne pepper
¼ teaspoon kosher salt
1 tablespoon fresh lemon juice
1. Place all the ingredients in a medium-size serving bowl, mix to combine, cover and refrigerate at least 3 to 4 hours and up to 8 hours.
