2 teaspoons olive oil
½ Spanish onion, chopped
1 garlic clove, finely chopped
1½ cups basmati rice
2½ cups chicken or vegetable broth
⅓ cup toasted pistachio nuts, coarsely chopped
1. Place a small saucepan over medium heat and when it is hot, add the oil. Add the onion and garlic and cook until the onion is soft, about 10 minutes.
2. Add the rice and broth and bring to a boil. Cover, lower the heat to low and cook until the broth has been absorbed, about 20 minutes.
3. Add the nuts, and transfer to a heated medium-size bowl. Serve immediately.
