Although I am a die-hard fan of romaine lettuce, I sometimes love a salad of soft, buttery Bibb lettuce.
FOR THE RED ONION AND BALSAMIC VINAIGRETTE
1 to 2 tablespoons finely chopped red onion
1 tablespoon balsamic vinegar
1 tablespoon olive oil
2 to 3 heads Bibb lettuce, outer leaves discarded
1 teaspoon kosher salt
2 tablespoons chopped fresh chives
1. To make the Red Onion and Balsamic Vinaigrette: Place the onion, balsamic vinegar and oil in a small mixing bowl and combine.
2. Place the lettuce in a large salad bowl. Toss the lettuce with the dressing, sprinkle with the salt and chives and serve immediately.
