The marriage of cheddar and chutney may seem unlikely, but it’s truly delicious.
Serves 6 to 8.
2½ pounds ground beef
½ pound sharp cheddar cheese, thinly sliced
½ cup mango chutney
1 tablespoon kosher salt
¾ teaspoon black pepper
1 tablespoon sugar
1½ tablespoons curry powder
1. Divide the beef into 6 to 8 pieces of equal size. Divide each portion in half and flatten the halves. Place an equal amount of the cheese on half the patties and top each with 1 tablespoon chutney. Top with the other halves and re-form into patties. Seal the edges by pinching them together, and flatten. (You can cover and freeze the patties for up to 3 months.)
2. Place the salt, pepper, sugar, and curry powder on a plate and stir to mix. Just prior to cooking, lightly coat each patty with the mixture.
3. Place a large skillet over medium-high heat and when it is very hot, add the burgers, allowing the pan to reheat for 30 seconds between additions. Cook until deeply browned, about 3 to 5 minutes on each side. Serve immediately.
