Glazed Apple Cake

  • **Cake**
  • 1½ cups white sugar
  • 3 large eggs, room temperature
  • 1¼ cups canola or corn oil
  • ¼ teaspoon salt
  • ¼ cup apple or orange juice
  • 3 cups all purpose white flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 2 Granny smith apples, peeled and finely chopped
  • ½ cup coconut (optional)
  • ½ cup walnuts (optional)
  • ½ cup raisins (optional)
  • **Glaze**
  • 2 tablespoons unsalted butter
  • ¼ cup sugar
  • ½ teaspoon baking soda
  • ½ cup buttermilk
  1. Preheat oven to 325 degrees. Lightly grease and flour a 10 inch bundt or ring pan.
  2. Combine the sugar, eggs, oil, salt, juice, flour, soda, cinnamon and vanilla in a large mixing bowl and blend well. This can be prepared in a mixer or by hand.
  3. By hand, add apples, coconut and walnuts, if desired, and mix until combined.
  4. Place in prepared pan and bake for about 50- 60 minutes or until a tester inserted comes out clean. Let sit in pan about 15 minutes.
  5. In the meantime, place the butter, sugar, baking soda and buttermilk in a small saucepan and bring to a boil.
  6. Prick the cake all over with the tines of a fork or a toothpick and pour the glaze over the cake while the cake and the glaze are still warm.
