Grilled Shrimp Skewers

Serves 6.

24 large shrimp, peeled and deveined
2 tablespoons olive oil
1 teaspoon kosher salt
½ teaspoon black pepper

1. Prepare the grill. Place 6 wooden skewers in a bowl of water and let them soak.

2. Place the shrimp, oil, salt, and pepper in a medium-size mixing bowl and toss to coat.

3. Thread 4 shrimp onto each skewer. Place the skewers on the grill and cook until the shrimp are pink and opaque throughout, about 2 to 3 minutes per side. Lay skewers on 6 individual plates and serve immediately with your choice of side dishes.
