Joan Goldberg’s Light! Fresh! Refreshing! Delicious! Dip

My friend Nancy got this amusingly described summer dip recipe from her friend Joan Goldberg and in fact, it is all she says: light! fresh! refreshing! delicious! Joan adds that it must be served with Lay’s Ridged potato chips.

Serves: 4 cups
 
Ingredients
  • 2 cups sour cream or Yogurt Cheese (page 00)
  • 1 cup mayonnaise
  • 2 cucumbers, seeded, if desired, peeled and finely chopped
  • 2 cups fresh Italian flat leaf parsley, finely chopped
  • 1 bunch scallions, or ½ red onion, finely chopped
  • ¼ teaspoon kosher salt
  • ½ black pepper
Instructions
  1. Place all the ingredients in a bowl and mix well. Serve immediately or cover and refrigerate overnight.
