Ingredients
  • 1 pound beans, rinsed and picked over
  • 4 cups water
  • **optionals**
  • 1 ham hock
  • 1 cup coarsely chopped celery
  • 1 small onion, sliced
  • 2 teaspoons salt
  • ¼ teaspoon pepper
Instructions
  1. Place beans and water in 3 quart casserole. Cover and cook over high heat for 30 minutes or until boiling. Reduce heat to medium and cook until tender or for about 1½ hours, stirring every 30 minutes.
