Mixed Green Salad with Red Onions and Toasted Pine Nuts

Serves 6.

1 head red leaf lettuce, torn
1 head green leaf lettuce, torn
½ red onion, thinly sliced
¼ cup toasted pine nuts
3 tablespoons extra-virgin olive oil
3 tablespoons red wine vinegar
1 teaspoon kosher salt
½ teaspoon black pepper

1. Place the lettuces, onion, and pine nuts in a large salad bowl. Drizzle with the oil and vinegar and sprinkle with the salt and pepper. Serve immediately.
