Orange-Marinated Pork

Sweet, salty, and tangy, this dish can be served with rice and any sautéed green, such as broccoli or kale.

Serves 4 to 6.

4 to 6 boneless pork chops
¾ cup orange juice
2 tablespoons soy sauce
2 tablespoons light brown sugar
2 teaspoons minced fresh gingerroot
Juice and grated zest of 1 lime
1 ripe peach, nectarine, or mango, diced
1 teaspoon kosher salt
½ teaspoon black pepper

1. Place everything except the salt and pepper in a shallow bowl or pan, and stir to mix. Cover and refrigerate at least 20 minutes and up to 4 hours

2. Prepare a grill.

3. Place the pork chops on the grill, sprinkle with the salt and pepper, and cook for about 5 minutes per side, basting all the while with the liquid from the marinade. Serve immediately, topped with the fruit.
