I have a particular fondness for zucchini cooked this way.
1 tablespoon unsalted butter
2 garlic cloves, minced or chopped
3 large zucchini, trimmed and cut into coin like slices
1 teaspoon kosher salt
½ teaspoon black pepper
1. Place a large skillet over medium-high heat and when it is hot, add the butter. Add the garlic and cook for 1 minute. Add the zucchini, salt, and pepper, and cook until the zucchini is well browned, about 4 to 5 minutes on each side. Transfer to a heated serving bowl and serve immediately.
