Romaine Salad with Turkey, Feta Cheese and Peaches

When it’s too hot to turn on the stove, this is a perfect dinner: a little bit of everything.

2 heads romaine lettuce, washed well and torn into bite size pieces
2 beefsteak tomatoes, diced
2 cucumbers, peeled, if desired and sliced
1/3- ½ pound feta cheese, crumbled
½ pound roasted or grilled chicken or turkey, thinly sliced
1 large peach or nectarine, diced
1 – 1 ½ cups day old bread cubes or croutons
¼ red onion, thinly sliced
2 teaspoons dried Greek oregano
2 tablespoons chopped fresh basil leaves
2 tablespoons chopped fresh mint leaves
1 tablespoon olive oil
1 tablespoon balsamic vinegar
juice of one lemon (about ¼ cup)
Salt and Pepper to taste

Combine all the ingredients in a large salad bowl and serve immediately.
