Salad of Arugula, Avocado, and Mango

This salad is a combination of bitter, buttery, and sweet.

Serves 6.

FOR THE DRESSING
2 tablespoons olive oil
1 tablespoon red wine vinegar
1 tablespoon balsamic vinegar
1 teaspoon kosher salt
½ teaspoon black pepper

2 bunches arugula, well washed and torn
2 avocados, cut into medium dice
2 mangoes, cut into medium dice

1. To make the dressing: Place the oil, vinegars, salt, and pepper in a small mixing bowl and whisk.

2. Divide the arugula between 6 plates and top with equal amounts of avocado and mango. Drizzle with the dressing and serve immediately.
