Seared Greens

Serves 6.

1 tablespoon olive oil
2 to 3 garlic cloves, minced
1 bunch mustard greens, broccoli rabe, spinach, or escarole, well washed and trimmed
2 tablespoons balsamic vinegar
1 teaspoon sugar
1 teaspoon kosher salt
½ teaspoon black pepper

1. Place the oil in a large skillet over high heat and, when it is almost smoking, add the garlic, greens, vinegar, and sugar, stirring well after each addition. Cook until wilted, about 1 to 2 minutes. Add the salt and pepper. Transfer to a large heated plate and serve immediately.
