This crackly rub works equally well on pork, chicken, and shrimp. Serve this with warm tortillas instead of bread, and your favorite salsa on the side.
Serves 6 to 8.
6 tablespoons light brown sugar
2 to 3 teaspoons chili powder or chipotle chile powder
1 tablespoon ground cumin
2 tablespoons kosher salt
4 sirloin or rib-eye steaks
1. Prepare the grill or preheat the broiler.
2. Place the brown sugar, chili powder, cumin, and salt in a small bowl and mix well. Rub into steaks.
3. Place the steaks 3 to 4 inches from the heat source and cook until slightly charred, about 4 to 5 minutes per side for medium-rare. Transfer to a cutting board and let rest 5 minutes before slicing and serving.
