Three Breakfast Butters

These butters can gild scones, pancakes, waffles, croissants, or just plain toast. They can be shaped into cylinders, covered in waxed paper, and placed in a plastic bag., then refrigerated or frozen. Slice them into coins for a nice presentation.

Yield: ½ cup flavored butter.

HONEY BUTTER
½ cup unsalted butter, at room temperature
3 tablespoons honey
¼ teaspoon vanilla extract

APRICOT BUTTER
½ cup unsalted butter, at room temperature
2 teaspoons apricot jam, or any good quality jam or preserve (but not jelly)

CINNAMON SUGAR BUTTER
½ cup unsalted butter, at room temperature
1 teaspoon ground cinnamon
2 tablespoons light brown sugar

1. Place the butter in a small bowl and mash until smooth. Add the remaining ingredients and mix until combined. Place on a large piece of waxed paper and form into a log. Use immediately, cover and refrigerate up to 2 weeks, or freeze up to 2 months.
