Watercress Salad with Orange Segments

You could substitute pink grapefruit, tangerines, or clementines.

Serves 6.

3 bunches watercress, well washed and torn
2 oranges, peeled, pith removed, and diced
1 tablespoon fresh orange juice
2 tablespoons rice wine vinegar
2 tablespoons vegetable oil
1 teaspoon toasted sesame oil
1 teaspoon kosher salt
½ teaspoon black pepper

1. Place the watercress and oranges in a medium-size salad bowl. Drizzle the orange juice, vinegar, and oils and sprinkle with the salt and pepper. Toss gently and serve immediately.
